The 100% natural process of elaboration of this exquisite, soft and delicate Serrano Ham is carried out in 6 simple steps that are the result of centuries of experience improving each stage from the selection of the legs to the packaging process. The pigs of Spanish origin (Catalonia), are analyzed according to various controls of temperature, ph, fat, among other characteristics and variables that serve to classify the quality of the legs and thus proceed with the second step of salting the pig. After this, the legs are washed and stored in cold chambers with controlled humidity and these two variables are regulated so that the ham is cured. In the fourth step, the legs are left to mature in controlled environment cellars where the ham acquires its aroma, color and flavor. The remaining steps correspond to the quality control and packaging stage.
